New Mexico is the capital of chile growing. Every Labor Day weekend they put on a festival of chiles. My loving wife loves chiles, as anyone that has seen our place knows. Well this year we are hoping to make it to the festival.
Back a few years ago when my children where still living at home, me and some friends would have pounds of these chiles shipped to our home and we would roast them on the BBQ and freeze them. They are just unbelievablely tasty. Big green meaty chiles that go with almost any meal. Well at least I always thought so. Big Jims are mild and wonderful stuffed with cheese and things. Sandias are nice at a medium degree of heat. Purfect for a burger or if you are still young enough to with stand the extreme heat, there are Barker chiles. I bet Christopher remembers them and would love to have some in the freezer again.
I'm hoping to bring enough back to last me the year. Vacuum sealed and frozen.

Heck yes I remember these. I'd shuffle the Big Jim's to the back of the freezer and keep the Barkers handy. I think we ran out of those first. LOVED them. I didn't know we BBQ'd them ourselves. I thought they came like that. I am sending some cash so you can bring me some back. I tried growing them myself this last year and they were too small. Cassie learned how to bread them and stuff them with cheese. So we will need some Big Jim's too.
